Bacon Cheddar Dip

It's Labor Day weekend which means barbecues and beach time! And with barbecues comes one of my favorite things.. chips and dip! 




I found this Bacon Cheddar Dip recipe by Plain Chicken through Pinterest (where else??) and I've been dying to make it. It's seriously the simplest recipe ever. No cooking or waiting for cream cheese to soften.  Just mix up and serve. Well, technically you're supposed to let it marinate for 24 hours but who can wait for that?? 




You start off mixing up sour cream and ranch dressing mix. I decided to go crazy and use the Hidden Valley Fiesta Ranch dip mix.. excellent choice, if I do say so myself! 




Next, you just add in your real bacon bits (not the fake soy stuff you get in the bottle!) and shredded cheddar. If you use the bagged bacon instead of making it yourself, make sure you take out the little absorbent packets before dumping it in! :) 



Mix up and refrigerate for 24 hours (if you can wait)! So yummy!! 



You can serve with any kind of chips, crackers, veggies, etc. I ended up using nacho flavored Doritos and everyone LOVED it. Just keep in mind that the ranch mix and bacon are pretty salty so you might want to go with a low sodium cracker if you don't want a salt overload. 






Bacon Cheddar Dip (adapted from plainchicken.com)
16 oz Sour Cream
4 oz crumbled bacon (e.g. Hormel brand bag found near bacon bits)
1 packet ranch dressing or dip mix
1 cup shredded cheddar cheese

Mix together and refrigerate for 0-24 hours before serving with chips or crackers.
