Peanut Butter and Honey Popcorn

As you may have read in my last post, I participated in the Lean Green Bean's Foodie PenPal program this month. When my pal, Ashlyn, over at Gorgonites vs. Commandos told me she loved honey and popcorn, what was I to do but search Pinterest for the perfect recipe?! 



What I found was Real Mom Kitchen's ooey gooey delicious Peanut Butter and Honey Popcorn.

This incredibly delicious and easy recipe only needs a few ingredients that you might even have on hand: popcorn, peanut butter, honey, and sugar. How easy is that??



First, you'll want to prepare eight cups of popcorn. You can use the prepackaged lightly salted microwaveable popcorn or make your own popcorn just as easily. 



Set aside the prepared popcorn then combine 1/2 cup sugar and 1/2 honey in a saucepan. 



I used half raw honey and half regular honey (only because raw is so expensive!). If you've never had raw honey, you should seriously try some. It's raw because it is pure, unheated, and unpasteurized. The "normal" honey you get in the store has been pasteurized and supposedly no longer contains all of the health benefits that you get from pure honey. But it really just tastes so much better!  Yum



Now back to the good stuff! Heat the sugar and honey until it comes to a rolling boil. 



Remove from heat and add 1/2 cup peanut butter and 1/2 tsp vanilla, stirring until smooth. 


Since I was already at Sprouts for the popcorn and honey, I decided to pick up some of their natural peanut butter. Notice how the peanuts and oil separate? Gross looking but so good once it's all stirred up! 



Finally, you're going to pour the mixture over your prepared popcorn and carefully fold it in until all the pieces are coated evenly. Eat up the gooey deliciousness right away or spread in an even layer over a cookie sheet to cool. Enjoy!
