I bring you a quick, simple, and even healthy recipe that is downright yummy: the loaded
baked potato cauliflower casserole! I know what you're thinking, you love loaded baked potatoes.. but cauliflower? I promise you can't even taste the veggies!
To start off, you need to gather just a few ingredients: cauliflower (fresh or frozen), sour cream, shredded cheddar cheese, and anything you'd normally top a baked potato with: crumbled bacon, chopped green onions or chives, caramelized onions, chicken, broccoli, parsley, etc.
Once it's all stirred up, sprinkle another 1/2 cup of shredded cheese on top and a few more sprinkles of your toppings, if desired.
Now its time to wait.. stick it in the oven for about 15-20 minutes.
If the cauliflower is still hot, you only need to leave it in long enough to melt the cheese.
You now have a creamy, cheesy, bacony mess of deliciousness!
And it really does taste just like a loaded baked potato... yummy!
