Loaded Baked Pota-- Cauliflower?

After a long hiatus due to a busy work schedule, I am back with a vengeance... well, I'm back anyway.. 

I bring you a quick, simple, and even healthy recipe that is downright yummy: the loaded baked potato cauliflower casserole! I know what you're thinking, you love loaded baked potatoes.. but cauliflower? I promise you can't even taste the veggies! 



To start off, you need to gather just a few ingredients: cauliflower (fresh or frozen), sour cream, shredded cheddar cheese, and anything you'd normally top a baked potato with: crumbled bacon, chopped green onions or chives, caramelized onions, chicken, broccoli, parsley, etc. 


Preheat your oven to 350 degrees. Then cook your cauliflower until tender (I used frozen and microwaved according to directions on the bag). Once that's complete, stir in your sour cream, 1/2 cup of shredded cheddar cheese, and your toppings of choice. I added bacon and chopped chicken breast to mine: 




Once it's all stirred up, sprinkle another 1/2 cup of shredded cheese on top and a few more sprinkles of your toppings, if desired. 




Now its time to wait.. stick it in the oven for about 15-20 minutes.




If the cauliflower is still hot, you only need to leave it in long enough to melt the cheese.




You now have a creamy, cheesy, bacony mess of deliciousness! 



And it really does taste just like a loaded baked potato... yummy


Loaded Baked Cauliflower Casserole (adapted from Food.com)
1 12-16oz bag of frozen cauliflower (approx 2 cups fresh)
1 cup Sour cream
1 cup Shredded cheddar cheese

Optional Topping Suggestions:
3-6 slices cooked, crumbled bacon OR 2-4 tbs pre-crumbled bacon pieces
1/4 cup chives, finely chopped
3 green onions, finely chopped
1/2 cup chicken breast, chopped or shredded 
1/4 cup grilled onions 

Preheat oven to 350 degrees. Cook cauliflower until tender. Add sour cream, 1/2 of cheddar cheese, and desired toppings to cauliflower. Fold ingredients into cauliflower until well mixed then top with remaining cheese. Sprinkle with additional toppings, if desired. 

Heat in oven for 15-20 minutes or until cheese is melted. Enjoy as side or main dish.
