Loaded Baked Pota-- Cauliflower?

After a long hiatus due to a busy work schedule, I am back with a vengeance... well, I'm back anyway.. 

I bring you a quick, simple, and even healthy recipe that is downright yummy: the loaded baked potato cauliflower casserole! I know what you're thinking, you love loaded baked potatoes.. but cauliflower? I promise you can't even taste the veggies!

Insalata Caprese with Balsamic Reduction

One of my favorite summer (or any time) meals, is caprese salad. There is something just so incredibly perfect about the combination of tomatoes, basil, fresh mozzarella, and balsamic vinegar. 

On this hot summer day I decided to mix things up a little bit and use a balsamic reduction instead of plain balsamic vinegar. The reduction is sweeter and more flavorful and sticks a little bit better to the salad.
