Loaded Baked Pota-- Cauliflower?

After a long hiatus due to a busy work schedule, I am back with a vengeance... well, I'm back anyway.. 

I bring you a quick, simple, and even healthy recipe that is downright yummy: the loaded baked potato cauliflower casserole! I know what you're thinking, you love loaded baked potatoes.. but cauliflower? I promise you can't even taste the veggies!

Peanut Butter and Honey Popcorn

As you may have read in my last post, I participated in the Lean Green Bean's Foodie PenPal program this month. When my pal, Ashlyn, over at Gorgonites vs. Commandos told me she loved honey and popcorn, what was I to do but search Pinterest for the perfect recipe?!

Microwave Popcorn

I didn't think this was much of a secret but I recently met someone who didn't know, so here goes.. you can pop popcorn in the microwave! 


Yes, that's right. You don't need a big fancy machine to turn regular old popcorn kernels into delicious popcorn! All you need is a microwave and a brown paper lunch bag.

Cake Batter "Fudge"

I am in love with the cake batter and cookie dough dessert trend going on! Who didn't love licking the spoon as a child and wishing those salmonella poisoned eggs weren't in the batter?! When I saw this recipe for 5 minute, 4-ingredient cake batter fudge, I knew I had to try it.

Bacon Cheddar Dip

It's Labor Day weekend which means barbecues and beach time! And with barbecues comes one of my favorite things.. chips and dip! 




I found this Bacon Cheddar Dip recipe by Plain Chicken through Pinterest (where else??) and I've been dying to make it. It's seriously the simplest recipe ever. No cooking or waiting for cream cheese to soften.  Just mix up and serve. Well, technically you're supposed to let it marinate for 24 hours but who can wait for that??

Insalata Caprese with Balsamic Reduction

One of my favorite summer (or any time) meals, is caprese salad. There is something just so incredibly perfect about the combination of tomatoes, basil, fresh mozzarella, and balsamic vinegar. 





On this hot summer day I decided to mix things up a little bit and use a balsamic reduction instead of plain balsamic vinegar. The reduction is sweeter and more flavorful and sticks a little bit better to the salad.
